You know what pairs well with Dolly's famous biscuits? Any of the jams from The Mason Jar 🫙🫶

As I'm always down for a great pun🫶, intended or otherwise, I LOL'd when I clued in on the double Ds abbreviation for Dolly's Diamond Jam 💎 ✨💖

For every winner winner 🏆 chicken dinner there are probably at least three big ol' duds 😬😂🤣

It's apparently "Southern" week at The Mason Jar and we have a spectacular lineup:

🥭 Pawpaw Jam - the elusive, nostalgic fruit I had only heard about in song 🤣 until now! Citrusy, tropical, and banana 🍌 like taste with a custard like texture

🍇 Muscadine Jam - a southern original and favorite, from the grape family

💚 Scuppernong Jam - the bronze, or green, muscadine also in the grape family

🤎 Fig Preserves - an old-fashioned favorite

And a couple of new hot sauces 🔥

🥭 Paw Paw Pow (😂) the aforementioned pawpaws, with scotch bonnet peppers and cowhorn peppers, and a splash of pineapple for a spicy, tropical kick

💜 Plum Hot! Sauce - 500k ish super hot peppers, plums, and purple bell peppers

All of these will be on the Huntsville Food & Farm Hub 🛒 with ordering open Thursday - Sunday, and we will have them in person at Bailey Cove Farmers Market Saturday 8-12noon

When my sister and I were around high school age, we were helping Nannie bake or cook when she started singing "picking up pawpaws and puttin' them in my pocket, way down yonder in the pawpaw patch". We thought it was hysterical that Nannie was out there making up fruits, but guess what - they're real! The largest indigenous fruit to North America has a custard-like fruit that has a tropical citrus taste.

As much as Google says they grow around here, I've never seen the fruit in 30+ years of searching for it. Also known as "The Kentucky Banana", I've spent the last 5 years since starting The Mason Jar - Canning & Home desperate to find some form of this fruit to preserve.

Today was THE DAY! Yesterday, I saw a marketplace ad pop up, and today I picked up 10lbs of the elusive pawpaws. It's a fruit with a short growth cycle/season and practically no shelf life, so these bad boys went from tree to jam in less than 24hrs ‼️

The outside temperature 🌡️ isn't the only super HOT 🥵 thing going on...We have some new peppers and that means - new hot sauces coming soon 🔥

Working titles, may do a poll for some naming options, starting with the mildest...

Holy Shishito! Blistered shishitos (around 200 SHUs) and black magic jalapenos (2k SHUs)

Beam Me Up Scotchies: Scotch bonnets, 100k - 350k SHUs) with bell peppers and TBD fruit

Darth Pepper, Black Magic Woman: Black B*st*rd super hots ( 400k - 600k SHUs) with purple bell peppers - super hot 🔥 and will be beautiful color, this one will take a little longer and be a fermented sauce as I don't want to cook it and pepper spray myself 😳😬

13 years ago today, my grandfather Vic (or Bic as I first called him) passed away. Victor Trask was many things, a WWII Navy veteran, a retired Colonel in the Army, golf enthusiast, seemed to love lawn care more than anyone I've ever known, and what an amazing cook ❤️

And that's what I remember the most about him, the spaghetti sauce. But his rule was, you can't call it spaghetti sauce unless you're actually having it with spaghetti 🍝 noodles. He picked me up from school once, and I excitedly asked right away are we having spaghetti for dinner - he said No, we're having macaroni. I pouted because, while I was sure his Mac and cheese 🧀 game was strong - nothing compared to that sauce! So I learned this pasta lesson once dinner was served and we DID have spaghetti but with macaroni noodles that only one place in Hsv sold...I can find plain macaroni not elbow at one Walmart neighborhood market now ❤️

I was around 8 when I started asking how to make the sauce myself 😳 and he started explaining about putting the sausage and meatballs in first, then the onions and garlic, etc like a scene straight out of Goodfellas - and nothing I could replicate bc I was 8 😂

When Mom & and my stepdad William began dating, William wanted to cook dinner for us and chose spaghetti as the dish...and this was our fault bc he should have warned 😆 I walked in the kitchen and saw a jar of Ragu and almost called the cops 🚓

I so wish Vic was here to see how many people now love his "spaghetti" sauce as much as I do. So much so, I'm happily making it almost every week this year 🍝

Not to brag...but The Mason Jar is a butterfly 🦋 fan fav 🫶

Introducing Poire Belle Hélène, an August Escoffier recipe from 1864 😳 named after a popular operetta. The dessert consists of poached pears drizzled with rich chocolate sauce and served with vanilla ice cream.

In jam form 🫙, it's rich chocolate 🍫 sauce topped with chunks and slices of sweet pears 🍐 with homemade vanilla extract added to both ❤️🇨🇵

As I begin making some jams inspired by Christine Ferber and Le Maison Ferber...I want to designate these jams with a slightly different label. Pictured below, it's my usual label en francaise 🇨🇵

The process to make them is longer, there are large chunks or whole fruit in them, usually in heavy syrup rather than a uniform jam consistency, and these will be micro batches of jams made with only what is in season

Welllll, we are going to sit another one out due to the sketch forecast 🌧️☔ 🌧️ So we won't be at the Bailey Cove Farmer's Market tomorrow (Saturday) but will be back next week ❤️
